Roasted sweet potato and corn salad with lime dressing

Weekly Kitchen banner

Sweet potato and corn salad combines caramelised edges with a bright lime finish. It is substantial enough to build lunch around, especially with black beans, but also works as a colourful side. Keep the dressing and fresh herbs separate if you are preparing components in advance. This is a Mexican-inspired combination of sweet potato, corn, beans, and lime. It does not need a long list of spices: cumin gives the vegetables warmth, while the lime and coriander add freshness at the end.

At a glance • Serves: 2 as a main with beans, or 4 as a side. • Preparation: about 15 minutes. • Cooking: about 30–35 minutes. • Serve warm after cooking or chilled following safe cooling and storage.

Ingredients • 500 g sweet potato, scrubbed and cut into roughly 2 cm cubes. • One red pepper, cut into broad pieces. • 1 tbsp olive oil and ½ tsp ground cumin. • 200 g sweetcorn, drained if tinned, or cooked according to its packet if frozen. • One 400 g tin of black beans, drained and rinsed, optional for a main meal. • Two spring onions, finely sliced; a small handful of coriander. • Dressing: 1½ tbsp olive oil, 1½ tbsp lime juice, and salt and black pepper to taste.

Roast and assemble 1. Heat the oven to 220°C conventional / 200°C fan. Toss the sweet potato and pepper with the tablespoon of oil, cumin, and a little salt. 2. Spread across a rimmed tray with space between the pieces. Roast for around 30–35 minutes, turning once, until the sweet potato is tender. Use two trays if needed. 3. Prepare the corn. Drain tinned corn thoroughly; cook frozen corn according to the packet. For a little extra colour, briefly fry the prepared corn in a lightly oiled hot pan, taking care as kernels can spit. 4. Whisk the dressing ingredients together. Toss the roasted vegetables, corn, and optional beans with a little dressing, then taste before adding the rest. 5. Fold through the spring onions and coriander just before serving.

Get the balance right Sweet potato and corn are both sweet, so this salad needs enough lime and savoury seasoning to feel rounded. Taste a forkful with all the components rather than the dressing alone. If you add salty feta or a salty side, season the salad more lightly. Roasting is the main source of depth. If the vegetables are soft but pale, check the spacing on the tray next time. If they are dark outside and hard inside, cut them a little smaller or reduce the heat and allow longer.

Useful ways to serve it Make a bowl with black beans and shredded lettuce, then add lime yoghurt. Spoon a smaller portion into a wrap with freshly sliced avocado. For a warm supper, serve the vegetables straight from the oven and keep the cold fresh toppings alongside. The components also suit a simple spread with the smoky black beans from this journal. To avoid repeating the same meal, change the base and topping rather than making a completely new batch of vegetables.

Make-ahead notes Cool the cooked vegetables and corn promptly, then chill in covered containers. Keep herbs, dressing, and any lettuce separate. Freeze suitable extra cooked portions promptly for later meals rather than keeping the finished salad in the fridge all week. Fresh herbs and avocado are best added close to eating. Frozen cooked vegetables can become softer when thawed, so use those portions in a warm bowl or wrap where that texture works well. This recipe is a journal companion built around that flexible idea.
